Today, I cooked up about 4 pounds of mahi mahi. This is what I used and did, etc.

4 lbs of Mahi Mahi

Melt one cup of butter, and mix it with 1 cup of lemon juice, 2 tablespoons of Chef Paul's Redfish Magic (I would have used more, but that was all I had) 1 tablespoon of garlic powder, 2 teaspoons of cayenne pepper.

Put this mixture, and the fish in a pan, and make sure you get the sauce all over the fish. Bake it at 300° until its done.

Yum!   Obviously, you'd use less for smaller portions of fish.

catch it yourself , or did you buy it ?

This is what they look like for those of you who don't know : Posted Image
Not me - but I have caught them about the same size - though they tend to be smaller in my local waters.

Spectacularly athletic fish when hooked and absolutely beautiful when brought to the rocks or boat , the colours are stunning.

I have caught them in the past, but I bought this batch. Never one that big though.
