Stacked Vegetable Quesadillas; yummmm!

I made these today at work and everyone loved them!

Stir fry whatever mixture of veggies you love to eat! Spread veggies on a tortilla and top with some cheese. Place another tortilla on top along with more veggies and cheese. Top with another tortilla and some cheese. Bake at 400o for 10-15 minutes or until cheese is melted. Serve with salsa and sour cream if desired.

I've used both corn and flour tortillas and they're both delicious!

You're welcome! They are delicious! A lot of times I just do one layer of vegetables too, instead of two. They're not as messy then.
