Broccoli--Super Veggie

Broccoli is a super vegetable because it's jam-packed with vitamins
and minerals, and is a good source of fiber.

A cruciferous vegetable related to cabbage, cauliflower, Brussels
sprouts, and green cauliflower, broccoli's dark green color is a clue
that it's a good source of Vitamin C and Vitamin A.

In fact one serving of broccoli contains 200% of the Vitamin C you
need for the day! That's a lot of Vitamin C. Here's some more
nutrition info for 1 cup of raw broccoli.

Fiber 2.6g

Chinese Vegetable Stir-fry
Makes 4 to 6 servings

Ingredients

Sweet 'N' Sour Sauce

3/4 cup pineapple juice
1 tablespoon sugar
1 tablespoon lemon juice
1 1/2 teaspoons cornstarch
1 teaspoon light soy sauce

Stir-Fry Vegetables

4 teaspoons vegetable oil
1 cup broccoli florets
1 cup sliced carrot
1 cup cauliflower florets
1 cup sliced celery
1 cup chunked red bell pepper
1 cup sugar peas, stems removed

Combine the ingredients for the Sweet 'N' Sour sauce in a mixing
bowl. Heat oil in a skillet over medium high heat. Add broccoli,
carrots, cauliflower, and celery, cook for 2 minutes. Add bell pepper
and sugar peas, cook for 2 minutes. Add Sweet 'N' Sour sauce, bring to
a boil and cook for 1 minute, covered. Serve vegetables while hot over
plain rice.

Maybe I should make a broccoli soup for a starter for our dinner on Saturday... will look at the weather - it's a SA summer so soup may be out of the question!

My crew eats BIG. Maybe I have to start feeding them soup as a starter to slow them down a bit!
