Broccoli--Super Veggie Broccoli is a super vegetable because it's jam-packed with vitamins and minerals, and is a good source of fiber. A cruciferous vegetable related to cabbage, cauliflower, Brussels sprouts, and green cauliflower, broccoli's dark green color is a clue that it's a good source of Vitamin C and Vitamin A. In fact one serving of broccoli contains 200% of the Vitamin C you need for the day! That's a lot of Vitamin C. Here's some more nutrition info for 1 cup of raw broccoli. Maybe I should make a broccoli soup for a starter for our dinner on Saturday... will look at the weather - it's a SA summer so soup may be out of the question! |

My crew eats BIG. Maybe I have to start feeding them soup as a starter to slow them down a bit! |
