STARTER MIX FOR AMISH FRIENDSHIP BREAD 1 pk. active dry yeast 2 1/2 cups warm water 2 cups flour 1 tablespoon sugar Dissolve yeast in 1/2 c. warm water in a deep glass or plastic container. Stir in remaining warm water, flour, and sugar. Beat until smooth. Cover with loose fitting cover. DO NOT REFRIGERATE. The starter requires 10 days for fermentation as follows. Days 1,2,3, and 4 - Stir Batter. Day 5 - add 1 cup each milk, flour and sugar and stir. Days 6,7,8 & 9 - stir batter each day Day 10 - add 1 cup each flour, sugar, milk and stir. The batter is ready to use. This makes 3 cups batter to use in recipes. If you want, you may pour 1 cup batter each into 3 containers and give 1 or 2 away. AMISH FRIENDSHIP BREAD DO NOT REFRIGERATE THROUGH THE ENTIRE PROCESS!!! Day 1-4 - Do nothing but squeeze air out of bag once a day Day 5 - Add 1 cup of flour, 1 cup of sugar and 1 cup of milk Day 6-9 - Do nothing but squeeze excess air out of bag once a day. Day 10 - In a non-metal bowl, add to existing mixture: 1 cup of flour, 1 cup of sugar and 1 cup of milk Preheat oven to 325 degrees Then pour four 1 cup portions into four (4) gallon zip lock bags and label. (You should keep one bag to make some more in 10 days, and pass on the remaining bags to your friends along with the recipe) To the rest of the mixture add: 1 large box of vanilla instant pudding or 2 small ones 1/2tsp. baking soda 1 cup sugar 1 tsp. vanilla 1 tsp. cinnamon 1 cup of oil 1/2tsp. salt 1 1/2 tsp. baking powder 2cups flour 3/4 cups milk 3 large eggs Grease and flour coat 2 large loaf pans. Sprinkle extra sugar and cinnamon on top Bake at 325 defrees for 1 hour to 1 1/4 hours. ENJOY PS-If you dont have vanilla pudding, chocolate can be substituted. I have even used coconut pudding... experiment and enjoy!!! Other recipes: Bread Recipe #1 Yield 2 loaves or 1 cake 1 c. starter mix 1-1/2 tsp. baking soda 3 eggs 1-1/2 tsp. Cinnamon 1 c. sugar 1-1/2 tsp. Salt 2 c. flour 1-1/2 tsp. baking powder 2/3 c. oil Add new ingredients to 1 c. starter. Pour into 2 loaf pans or 1 bundt pan that has been greased and floured. Preheat oven to 350; bake 45 - 50 minutes.You can also add raisins, blueberries, nuts, apples, bananas, chopped dried dates, etc. if desired. Note: a glaze or light frosting like you might use on a coffee cake would be good if you use the bundt pan! AMISH FRIENDSHIP BREAD # 2 Yield: 2 loaves 1 c. starter 2/3 c. oil 1 1/2 tsp. baking powder 1/4 tsp. baking soda 3 eggs 1 c. sugar 2 c. flour 1/2 tsp. cinnamon Dash nutmeg Raisins, nuts, dried fruit, etc. (optional Combine ingredients. Pour batter into 2 greased loaf pans, 8 x 3 x 2 in. each. Preheat oven to 350; bake for 1 hour or until dry. --------------- This bread makes a delicious gift when wrapped in a pretty package, or you may just choose to share the starter with friends and family and let them bake their own bread! To keep the starter going, repeat steps for days 2 through 4! Bread Yield 2 loaves or 1 cake 1 c. starter mix 1-1/2 tsp. baking soda 3 eggs 1-1/2 tsp. Cinnamon 1 c. sugar 1-1/2 tsp. Salt 2 c. flour 1-1/2 tsp. baking powder 2/3 c. oil Add new ingredients to 1 c. starter. Pour into 2 loaf pans or 1 bundt pan that has been greased and floured.
