Call me crazy, but I really like fruit cake. For Christmas, my dear wife Faryda had bought each of us a small fruitcake from a dollar store, for $1.00 each. I really liked this and wanted another one, but they were all out and I know they have lots of calories and fat. I modified a 'cola cake' recipe I had shared here before and came up with the recipe below. 1 package yellow cake mix 12 ounces any type of lemon-lime soda pop, regular or diet 4 fruit-and-nut trail mix bars, chopped into small pieces Combine the cake mix and soda pop well in a large bowl. Stir in the chopped trail mix bars. Pour batter into any prepared cake pan and bake according to package directions. Cool and enjoy. I did frost the cake with a lemon frosting I made using butter, lemon juice, confectioners sugar and skim milk. I didn't measure, but would estimate I used about 3 tlb butter, 1 tlb lemon juice, 1/2 cup skim milk, and 2-3 cups confectionary sugar. Without frosting this is very low calorie, especially if you use diet soda pop. The frosting doesn't add too many calories, but probably should be saved for special occasions. Enjoy! |

I do not care for fruitcake, but this sounds wonderful and easy. I also have a friend from Scotland who adores fruitcake and I am going to send this to her. |

This does sound easy and I think I'd try it without the fruit. Maybe some nuts, but I know that ades fat and calories. |
