Pineapple Nut Bread 1-3/4 cup flour 2 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 3/4 cup coarsely chopped macadamia nuts 3/4 cup brown sugar, firmly packed 3 TBSP soft butter or margarine 2 eggs 1 cup crushed pineapple (DO NOT DRAIN) TOPPING: 2 TBSP sugar 1/2 tsp. cinnamon Sift together the first 4 ingredients. Add macadamia nuts to dry ingredients. In another bowl, cream brown sugar, butter, and eggs until fluffy. Alternately stir in half of the flour and nut mixture with half of the pineapple, mixing well after each addition. Add in remaining flour and nut mixture, then the remaining pineapple. Pour into a greased loaf pan (9x5x3 inch pan), OR 4 mini loaf pans. Combine topping ingredients and sprinkle over the loaf (loaves). Bake at 350 for 50-60 minutes for regular pan or about 30 minutes for mini loaf pans. |
