I made this last night... it was really good! Chicken thighs and drumsticks (2 per person) 1 whole head of garlic Chilli jam or chilli chutney 1 lemon 1 cup of cheap white wine olive oil Put some generous dollops of chilli jam under the skin of each piece of chicken, and put in a roasting pan. Bash the garlic to break the skin, and toss in with the chicken (don't need to peel it first). Drizzle with olive oil. Slice lemon in half, squeeze juice over chicken and toss lemon halves in with the chicken too. Roast at 300 degrees for 90 minutes. Add the white wine, back in the oven for 20 minutes until the juices are bubbling. If the chicken skins are not brown yet, put under the grill for a few minutes. Serve with couscous and gem squash. Delicious! |
