Homemade Banana Bread 1/2 cup softened butter/margarine 1 3/4 cup flour 1/2 teaspoon salt 1 cup sugar 1 tsp baking powder 2 cups mashed bananas Preheat oven to 350 degrees. Grease and flour a loaf pan. In a bowl mix butter and sugar until creamy. In a separate bowl combine flour, baking powder and salt. Blend dry ingredients with creamed butter/sugar mixture. Add mashed bananas and eggs. Pour into pan. Bake 1 hour or until knife or toothpick comes out clean. By Suzanne S. |

Now look what you've done - I'm craving banana bread!!! I usually bake my own, since I don't know of a store that makes good banana bread. Haven't done it in a while though so I can't really remember the recipe. |

I haven't baked banana bread (or zucchini) for that matter in ages. It is a delight. The last time I made some when was my grocery clerk asked me if I wanted some ripe bananas for free. Couldn't say no, and knew they are perfect for banana bread. When we buy bananas each week for MIL they never make it to the over ripe stage. |
