Two Sugar Free Cookie Recipes; frugalfriendsinthekitchen

Jeanine's Sugar-Free Butter Pecan Cookies
INGREDIENTS:
3 cups biscuit mix
1/3 cup pecan pieces
1 cup pitted dates
2 egg whites
1/3 cup warm water
2 tsp. vanilla
1/2 cup butter or margarine, melted
fruit-sweetened or sugar-free jam
pecan halves, optional
INSTRUCTIONS:
1. Preheat oven to 350.
2. Use a blender or food processor to chop pecan pieces until finely
ground. Sift biscuit mix into a medium mixing bowl, and stir in the
pecans. Set aside.
3. Use blender or food processor to puree dates, gradually adding
egg whites and warm water. Beat several minutes until creamy. Melt
butter, and then stir in date cream and vanilla. Fold liquid
ingredients into biscuit -pecan mix. Stir only until blended.
4. On an ungreased cookie sheet, form dough into cookies 1/4"
thickness by 2" diameter. Press a thumb print into the middle of
each cookie. Decorate each cookie with 1/4 tsp. of jam and/or a
pecan half.
5. Bake at 350 for 7-10 minutes until touches of light brown can be
seen. Makes 3 dozen cookies.

Diabetic Refrigerator Cookies
1/2 cup butter or margarine, softened
1 egg
2 tsp. vanilla
1 tsp. baking powder
1 dash salt
1 cup flour
1 cup dates--unsugared, chopped
1 cup coconut, shredded
1 cup walnuts or pecans, divided
Cream butter, egg and vanilla until mixed and fluffy. Beat in
dry ingredients gradually mixing well after each addition. Mix in
dates, coconut and 1/2 cups nuts. Form dough into two 1-1/2 inch
diameter logs. Roll logs into remaining nuts (1/4 cup each). Wrap in
waxed paper and chill (or freeze) until firm enough to slice.
Preheat oven to 350. Slice cookies 1/4 inch thick and place on a
nonstick cookie sheet. Bake 10-12 minutes until light golden brown.
Cool on wire
