How to extend the life of vegetables How to extend the life of vegetables . Vegetables are still alive (in a sense), even after been harvested. This is because they can take in oxygen &give out carbon dioxide &in addition, they still possess active enzymes in them. However over time, the natural metabolic processes will cause deterioration in color &texture. Refrigeration will slow down these processes but cooking will stop them. . If vegetables have started to fade but are not to be eaten as yet, wash them &trim off any brown or yellowish spots. Then cut them into large pieces & blanch them in boiling water for 1 to 2 minutes. Drain &blot the excess water & wrap them (or put them in containers or zip lock bags) before chilling. They will last for another 4 days. . With fresh vegetables, perform the above procedure but this time round, store them in a freezer instead &they will last for a few more weeks. ~tipsofallsorts.com |
