Oat Bran Muffins; Great For Lowering Cholesterol

Oat Bran Muffins (low fat, low cholesterol version)



Dry Ingredients:

1 teaspoon salt

2 ½ cups Oat Bran (NOT OATMEAL)

1 ½ Tablespoons Baking Powder

½ cup brown sugar (packed)

½ cup white sugar

½ cup chopped dried fruit (your choice)



Wet Ingredients:



2 Tablespoons of white corn syrup (such as Karo Syrup)

½ cup of egg substitute OR 2 egg whites

1 ¼ cup of evaporated skim milk



Bake 425 degrees for 15-17 minutes. DO NOT OVER BAKE (due to the lack of fat they will be too dry if over baked)

Makes 12 large muffins



NOTE** if eating to reduce cholesterol eat at least 3 muffins every day along with a low fat, low cholesterol diet.

Regular Oat Bran Muffins(these also will help to remove excess cholesterol, just not as quickly.

Thanks!! I don't have a cholesterol problem, but a low fat muffin recipe is always a great idea!!! :D
