having trouble getting enough calories

Okay, I never thought in a million years I would be asking how do I eat more? But since I gave up fast food and was diagnosed with type 2 diabetes it's all about healthy food and I'm still trying to discover how many carbs I can eat and not blow my sugar. My calories for the last 3 days were 1418, 1437, and 1076 (I wasnt feeling well yesterday) and according to myfitnesspal, for my weight and height I shouldn't go under 1700 calories. I suppose I was trying to stay strict no carb and then realized I could get by with a slice of toast for breakfast but I'm still not sure exactly how to eat. Plus on a budget so no more almonds or string cheese and other fancy things when I was on south beach years ago.
