I realize this is a little late in the season, but we found a new way for zucchini that everyone really likes. Saute some zucchini. If you want any other vegetables, add then in too. The last time I made it I added some shredded carrots, sweet red pepper, and red onioin. Great colors!! Heat up two cans of cream of celery soup with milk and add the vegetables. Heat through. Can also add some cheese. It was delicious!!
