Another easy recipe that we tried today and really enjoyed. Very low carb and moderate fat. Each of us got 3 pieces of bacon.

BAKED SALMON WITH BACON AND BROCOLLI

Ingredients:

SALMON FILLETS, 4 frozen -about 4 ounces each

BACON, 1 pound about 12 slices

BROCOLLI, 1 package frozen, chopped or spears

LEMON SEASONING to taste

Preparation:

On a large shallow baking pan (like a jelly roll pan), lay out the bacon so the strips are evenly distributed. Place the 4 salmon fillets on top of the bacon and evenly distribute the broccoli. Sprinkle lemon seasoning over the top of salmon and broccoli.

Bake for 20 minutes at 425 degrees, or until salmon is done. Serves 4

Variations:

If you want the bacon crisper, lay the strips across the salmon fillets and broccoli. Use whatever type of seasonings you like and have on hand. This would probably work with boneless, skinless chicken breasts or thighs, chicken tenders, or pork chops. If you are really watching your fat intake, you could try using turkey bacon or another type of lower-fat bacon. Experiment and have fun.

I made this with frozen cod, pepper bacon, lemon juice and broccoli. Did it in the Crockpot, draining grease twice. I ate two sandwiches on a bun with tartar sauce. Dick ate one. I liked mine. He didn't like his but he finished it. Enough for 8. Dogs like it and they will benefit from leftovers.
